Ingredients:3 orange cream sandwich biscuits
250 ml. chilled milk
1 fresh orange, segmented, peeled, deseeded
2 scoops vanilla icecream
1-2 drops orange colour
2-3 drops orange essence
few tender mint leaves
Method
- Chill orange segments, till required
- Crush biscuits coarsely, place in an electric mixer.
- Add 50 ml. milk, run to form a smooth paste.
- Add icecream, run again.
- Add rest of milk, essence, colour, 2 orange segments.
- Run again till mixture is very frothy.
- Save 3 segments, break remaining to pieces.
- Divide and put in 3 chilled glasses at bottom.
- Pour frothy mixture over segments.
- Insert one segment over rim of each glass.
- Place it such that it barely touches the froth.Top gently with a couple of mint leaves.
- Serve immediately.
