Ingredients
1 small head broccoli
1 carrot peeled, sliced thinly
1 cucumber sliced thinly
1 onion sliced thinly
1 cabbage leaf shredded coarsely
1 celery stalk, cleaned and sliced thinly
4-5 french beans, sliced diagonally
1 zucchini sliced thinly
2 green chillies chopped finelyv 2 flakes garlic chopped finely
1” ginger chopped finely
1 tbsp. white vinegar
1 tbsp. cornflour
1 tsp. soya sauce
salt to taste
1 tbsp. olive oilMethod
- Put half green chillies in 2 cups salted water.
- Bring to boil, add broccoli, simmer for 2 minutes.
- Drain broccoli in colander, run tap water over it, till cooled.
- Heat oil in nonstick pan, add carrots, beans, stir fry for 2-3 minutes.
- Add onions, and all other vegetables, stirfry till veggies are bright and crunchy.
- Dissolve ginger, garlic, remaining chillies, salt, sauce, vinegar, cornflour, in 1 cup water.
- Add to stirfried veggies, stir and cook till gravy is transparent and thick.
- Add broccoli, toss to mix veggies well and blend flavours.
- Serve hot and fresh with cocktails, mocktails, or as an accompaniment.
