Ingredients
For dough1 1/2 cups wheat flour
salt to taste
Water to knead doughFor stuffing
1 medium head broccoli chopped finely in chopper
2 potatoes, boiled and mashed
2 green chillies finely chopped
1” ginger finely chopped
1 flake garlic finely chopped
salt to taste
1 tbsp. oilTo proceed
Oil to shallow fry
Method for Dough
- Mix flour and salt, knead into soft smooth dough.
- Keep aside for 15 minutes, knead again if required.
For stuffing
- Heat oil, add ginger, garlic, chillies, stir.
- Add broccoli, stir for 2-3 minutes.
- Add salt, mix and take off fire.
- Mix into mashed potatoes.
- Keep aside to cool a little.
To proceed
- Take a pingpong ball sized dough, shape round.
- Roll into a thick chappati, 5” in diameter.
- Place same sized ball of stuffing in center of chappat.
- Cover by lifting chappati from all sides towards center.
- Press lightly, dust with dry flour, roll into 7” diameter rounds.
- Heat a griddle, shallow fry each paratha till golden and crisp.
- Serve hot with chutney or ketchup.
