Christmas Delights
Santa's Salad
Ingredients:
1 cup boiled macaroni
1 cup boiled chopped french beans
1 cup boiled peas
1 cup boiled chopped carrot
2 sprigs spring onions chopped finely
1 green chilli finely chopped
1/2 tsp. pepper powder
salt to taste
1 tsp. sugar powdered
1 cup orange or sweet lime juice
1 cup water
1 tsp. gelatine crystals

To garnish:
1 tomato sliced thinly
1 cup grated paneer or cheese
2 olives
1 carrot

Method:

  1. Mix all vegetables together, except garnishers.
  2. Add macaroni, salt, pepper, toss well.
  3. Take half cup water in a small pan.
  4. Sprinkle gelatine over it, allow to stand for 2-3 minutes.
  5. Warm this water, not allowing to boil, stirring till transparent.
  6. Mix together juice, remaining water and sugar in another bowl.
  7. Add gelatine, mix well.
  8. Transfer prepared vegetables to a flat bottomed round transparent dish.
  9. Pour the liquid mixture all over it, before it starts setting.
  10. Chill in freezer till well set.
  11. Remove, garnish to make santa's cap with tomatoes and paneer at one end.
  12. Follow with eyes with olives, nose with carrot, and mouth and beard with paneer.
  13. The round dish will now look like santa's face.

Making time: 30 minutes (excluding setting time)
Makes: 5-6 servings
Shelflife: 1 day refrigerated

Note: one may use half a packet of china grass if you do not use gelatine, or if plant gel crystals are not available.
