Easter Delicacies
Glazed Carrots
Ingredients

  6 red, thick carrots, washed and scrapped
1 tbsp butter
1 tbsp honey
1/2 tbsp sugar
1/8 tsp ginger powder
1/2 cup water
1 tsp chopped mint leaves
1/2 tsp salt
Pepper as per taste

Method:

  1. Scrub carrots clean, peel neatly  from base to tip, keeping external surface smooth and even.
  2. Nip off as little of the base end as possible to make a clean horizontal surface.
  3. Make holes in base surface, by inserting a toothpick halfway inside the carrot base.
  4. Boil plenty of water, immerse carrots in it, simmering till they become a bright orange. (approx.3-4 minutes)
  5. Drain, cool and dab with a clean kitchen cloth
  6. In a saucepan melt butter, add sugar and rest of the ingredients
  7. Let it cook on slow flame till carrots are coated with sauce
  8. Sprinkle chopped mint leaves and pepper as per taste
  9. Serve, garnishing with coriander leaves

  Making Time: 20 minutes
Serves: 3-4 servings
