Ingredients6 red, thick carrots, washed and scrapped
1 tbsp butter
1 tbsp honey
1/2 tbsp sugar
1/8 tsp ginger powder
1/2 cup water
1 tsp chopped mint leaves
1/2 tsp salt
Pepper as per tasteMethod:
- Scrub carrots clean, peel neatly from base to tip, keeping external surface smooth and even.
- Nip off as little of the base end as possible to make a clean horizontal surface.
- Make holes in base surface, by inserting a toothpick halfway inside the carrot base.
- Boil plenty of water, immerse carrots in it, simmering till they become a bright orange. (approx.3-4 minutes)
- Drain, cool and dab with a clean kitchen cloth
- In a saucepan melt butter, add sugar and rest of the ingredients
- Let it cook on slow flame till carrots are coated with sauce
- Sprinkle chopped mint leaves and pepper as per taste
- Serve, garnishing with coriander leaves
