- Fresh from the garden
Very aromatic and juicy, has the most earthy flavour,since it has been in the soil and just out, before using it.
- Fresh from the market
Fresh and similar to the garden ginger, though the age of a few days, would blunt the flavours and zest a bit.
- Dried ginger: pieces, powder
Dried ginger would have a strong flavour but one which is quite a few shades different from their, fresh counterparts. Dried ginger is used either in the powder form, like baking cookies, soonth laddoos, etc.A couple of pinches can substitute the a tsp. of fresh ginger, in case of inavailability.
- Preserved form: raw, sautéed, pureed
These are forms which can be either preserved for using ginger in a hurry with minimal fuss. They keep for months if properly stored.
- Pickled ginger
Ginger may be pickled either in brine, or in vinegar, or even in traditional Indian pickled masalas. This ginger may be eaten as an accompaniment with a meal. That pickled in brine may be added to salads, soups, or even gravies.
