So now a few tips on how best to handle greens so that they last for a long long time in the fridge.Always pick the leaves and discard stems, specially the hard ones, yellowed leaves, roots and any rotten leaves. Unless you clean the greens, they will not last very long, even in a fridge.
Once cleaned, if the leaves are too moist, spread out on a clean kitchen towel and allow to air out in a shaded dry area for 20-30 minutes or more, to allow the excess moisture to dry out. Never wash greens before storing, but always before using.
Then wrap them in a clean muslin cloth or meshed plastic box, and wrap again with a plastic bag or brown paper. One may also wrap in newsprint if the greens are not moist.
Place them in the crisper of the fridge, that is as far from the freezer as possible. This will keep them from becoming moist from defrosting, and limp.
To freeze for a long period, blanche till bright green in hot boiling water for 2 minutes, drain, run cold tap water on it in the colander, press out excess water, freezer in freezer bags, or containers. One may freeze even in the puree form.
To use, thaw to room temperature, removing only as much as required.
