Part 1Some greens taste much better when dried and used for flavouring. Of course one of the most popular example is dried, crushed fenugreek leaves known as "kasoori methi".Others like chick pea leaves are dried, and stored to make kadhis, and moothias.
Dried herbs like mint, coriander and basil are used powdered for sprinkling dry on top of the dish to season.
Some dried greens like chickpea leaves, dried spinach, etc. are put in boiling water for a few minutes to refresh before adding to the recipe.
Do not overcook greens as they not only lose their colour but they lose important and vital nutrients which are so important to the body for good health. So not let us follow the list of recipes:
