Green Bengal Gram Dishes

Ingredients:

3/4 cup (ground form) fresh green gram ground fine
1/2 cup sugar
1/4 cup ghee + 1 tbsp. ghee
2 tbsp. wheat flour
1 cup water
1/4 tsp. cardamom powder
3-4 drop edible green colouring (optional)
1 tbsp. chopped almonds & pistachios mixed

Method:

  1. Heat water, add sugar, bring to boil.
  2. Simmer for 4-5 minutes, cover, keep aside.
  3. Heat 1 tbsp. ghee in a heavy pan, add flour.
  4. Stir fry on low till flour exudes an aroma, light brown in colour.
  5. Empty, keep aside. Add remaining ghee to same pan.
  6. Heat, add crushed gram, stir cook on low for 15 minutes.
  7. Take care not to allow to stick at bottom of pan.
  8. Add sugar syrup carefully, because it may splash.
  9. Add fried flour, stirring constantly.
  10. Use a long handles spatula, stir constantly, till ghee separates.
  11. Add cardamom, chopped nuts, saving some for garnish.
  12. Add colour, stir gently, till well blended.
  13. Take off fire, garnish with remaining chopped nuts.
  14. Serve hot, or warm.
  15. Refrigerate, reheat, as required.
  16. To reheat, take required quantity in a small pan.
  17. Sprinkle some hot water, stir cook, till fresh made texture is achieved.
  18. Do not re-refrigerate, then texture may change.
