Ingredients:
1.5 Kg.stawberries, wiped and hulled
2 lemons
6 cups (900gms.) sugar
8-10 drops strawberry red colour (optional)Method:
- Extract juice of lemons.
- Tie rind and pit in a muslin bag.
- Chop strawberries coarsely.
- Put in a large cooking pan.
- Add in juice and rind bag.
- Heat till juice runs.
- Simmer till fruit is tender.
- Add sugar, stir to dissolve.
- Add colour. Mix.
- Boil on high till setting point is reached.
- Check with plate or spoon test.
- Pour while hot into sterile jars.
- Cool and seal shut.
Making time: 1 hour
Makes: 2-1/2 kg. jam (approx)
Shelfife: 3 months refrigerated
