Method:
- Rinse and wipe the plump stones of paayri or alphonso mangoes.
- Dry in strong sun for 5-6 hours.
- Gently tap stones on the seam side, with a hammer or pestle.
- Break open and remove the seed.
- Peel off the tough outer membrane of the seed, cut into tiny cubes, and wipe with a clean towel.
- Dry in hot sun for 8-10 hours, or till the pieces are dry and brittle.
- Bottle in clean sterile airtight bottles, at room temperature.
- These piece should not got bad for even over a year!
- When required, pressure cook till pieces are tender, drain and wash under running water.
- Can be used in making vegetable and other recipes.
