Pickles and Jam
Spicy Onion Pickle
Ingredients

250 gms. onions from spring onion greens
2 cups wet brine
1 recipe of Fiery red spice mixture
1 tbsp. fresh grated raw mango or 1 tsp. mango powder
1 cup oil
1/2 tsp of asafoedita

METHOD

  1. Peel outer skins of onions with a steel knife.
  2. Soak them in wet brine for 35-40 hours.
  3. Drain, wash thoroughly under running water.
  4. Dab with kitchen towel.
  5. Add 1 tbsp. fresh grated raw mango or 1 tsp. mango powder to spice mixture
  6. Sprinkle this spice mixture over them.
  7. Heat oil and cool
  8. Add asafetida powder to it
  9. Pack onions into jar
  10. Pour cooled oil over it, keep aside
  11. Shake every 24 hours till onions are tender.

Making time: 30 minutes
Makes: 250 gms. onions
Shelflife:  1 month refrigerated
