Ingredients:
1/2 kg potatoes, boiled and peeled
1/4 kg broccoli
1-1/2 cups coconut milk
2 tbsp yellow curry paste
2 onions, chopped finely
1/4 cup chopped carrots
3 cups water
Salt to taste
1/8 tsp pepper powder
2 tsp oilMethod for vegetable stock:
- Saute onion till transparent
- Add water and carrots
- Let it boil till water is reduced to 2 cups
Method for Curry:
- Boil the potatoes
- Cook broccoli till half cooked
- Heat oil in a pan
- Heat other pan
- Put yellow paste and 2 tbsp of coconut milk
- Stir till the mixture becomes dry
- Add 2 tbsp of broth, and continue stirring
- When oil separates, add rest of coconut milk
- Add 1-1/2 cup of vegetable stock
- Bring it to boil
- Add Potatoes and broccoli
- Let it cook till required consistency
- Serve with rice

Makes: 3 servings
