Festival Recipes

Sakkarai Pongal

This recipe is prepared on Pongal (Sankaranthi).

Ingredients

Raw rice(fine) - 1 cup(200 gm)
Green gram dal - 50 gm
Jaggery (gur) - 2 cups  (400 gm)
Ghee - 1 cup
Milk - 1/2 litre
Cashew nut - 1/4 cup
Raisin - 1/4 cup
Cardamom powder - 2 tea spoons
Menthol (Pachai Karpooram) - pinch

Method

  1. Fry rice and green gram dal in a pan with ghee on fire
  2. Boil the milk in a thick pressure pan
  3. Add the fried rice and dal into the milk ;add water and cook under pressure
  4. Prepare syrup with jaggery and water; add the syrup to the cooked rice and stir well
  5. Stir the sakkarai Pongal well while adding ghee
  6. Mix fried cashewnuts, fried raisins, cardamom powder and menthol
  7. Stir well and remove from fire after it becomes solid and soft
  8. Serve hot
