Chicken - 1 - 1.5 lb cut into medium-large sized pieces
All-purpose flour - 2 tbsp
Chilli powder - 1 tsp (or to taste)
Black pepper powder - 1 tsp
Fresh Lime Juice - 2 tbsp
Ginger garlic paste - 2 tsp
Salt - to taste
Food coloring - a little (optional)
Vinegar - 1 tsp
Olive Oil - 2 tsp
Butter - to coat the baking dish.Method:
- Take a bowl and mix all of the mentioned ingredients (except oil) and allow to marinate for 3-4 hrs (or refrigerate for 2 hrs).
- Smear the insides of a large baking dish with a little butter, and then place the marinated chicken pieces with adequate spacing (do not crowd in many pieces together).
- Drizzle a bit of olive oil on top and set the dish in the preheated oven at 400oF for 35 minutes.
- After 35 minutes, remove the baking dish from the oven, turn the pieces to the other side.
Drizzle in some more olive oil and sprinkle some black pepper powder and salt - Put back in the oven for another 20 minutes or until crispy and golden on all sides.
(Note: Check the pieces in the first half hour to make sure it doesn’t get burnt/overcooked. Temperatures/times may vary depending on type of oven. Overcooking might result in the chicken becoming too hard)
Serve hot with sliced onions and lime slices.
