2 yolks of eggs
1 tsp white vinegar
1/8 teaspoon salt
1-1/2 cups vegetable oil
4 tbsp lemon juice
1/4 tsp white pepper powderMethod:
- Put the egg yolks, salt 1/2 tsp lemon juice and vinegar in a large bowl
- Whisk with the food egg beater for a minute (till properly mix)
- Then while whisking add oil gradually, till mixture thickens (add approx 1/4th of oil)
- Thin it with lemon juice (approx 1 tbsp oil).
- Proceed the above 2 steps till all oil and lemon juice is used while beating continuosuly
- Add salt and pepper and mix it well with a spoon
- Chill it
- If refrigerated and covered properly, can last for 2 weeks
Variation:
Garlic mayonnaise: Add 1 garlic flake, crushed
Spicy mayonnaise: Add 1 tsp red chilli paste
Herb Mayonnaise: Add 1 tsp mixture of herbs like oregano, basil, dry celery
