3/4 kg medium sized potatoes, peeled
3/4 cup butter
2 cups chicken broth
Salt as per taste
Pepper as per taste
1/4 cup chopped capsicum
1/2 cup sour cream
1 tbsp chopped onion
3 tbsp grated cheeseMethod:
- Melt butter
- Roll potatoes in butter to cover it
- Arrange the potatoes in the baking pan
- Bake the potatoes in preheated oven at 375 F for 1 hour
- Turn the potatoes
- Pour broth, sour cream and top onion and capsicum
- Garnish with cheese
- Bake the potatoes again at 375 o for 45 minutes
- Sprinkle salt and pepper
- Serve
