Easter Delicacies
Easter Soup

INGREDIENTS 1/2 kg boneless meat
1/2 cup chopped spring onion
2 eggs
Salt as per taste
Pepper as per taste
1 cup chopped fresh parsley
1 cup chopped coriander leaves
1 cup grated cheese
2 tbsp lemon juice
1/4 tsp grated ginger
1 tbsp butter

Method:

  1. Pressure cook the meat in 1 liter water with ginger till tender
  2. Drain and keep the stock aside
  3. Chop the meat into small pieces
  4. Heat butter, saute spring onion
  5. Add meat pieces and parsley and cook for 10 minutes
  6. Add coriander leaves, salt and pepper and meat stock
  7. Let it simmer for 20-25 minutes
  8. Beat the eggs for 2 minutes
  9. Gradually add lemon juice to egg, while beating
  10. Add to soup, stir well and serve very hot, garnishing with cheese
