Easter Delicacies
Easter Pie

For Crust:
2 cups plain flour
2 egg yolks
1 tsp baking powder
1/4 cup butter, softened it
Pinch of salt
1/4 cup cold water (more if required)
1 tbsp sugar

  For Filling:
2 cups khoya (or can use drained ricotta cheese)
1 tbsp vanilla essence
1 cup cream cheese
3/4 cup crumbled paneer
1/2 cup sour cream
1/2 cup sugar
2 eggs
1 tbsp lemon juice

Method:

  1. Mix all the ingredients and make dough (it should not stick to hand)
  2. Cover the dough and refrigerate for 3 hours
  3. Beat egg, sugar and lemon juice in a bowl
  4. Add remaining ingredients of filling and beat it well till smooth
  5. Remove dough from freeze, place on a well dusted (with flour) work surface
  6. Roll the dough into approx 12-inch circle
  7. Line a 9-inch pan with the dough and trim the excess
  8. The excess dough can be cut into 4" long strips
  9. Refrigerate the pan and strips for 1/2 hour
  10. Preheat oven at 325 oF
  11. Remove the pan from freezer
  12. Put the prepared filling into crust
  13. Arrange the strips on top to form pie chart
  14. Brush the top strips with butter
  15. Bake it for almost an hour till golden brown
  16. Let it cool and then serve
