Egg Dishes
Egg Crostini

Ingredients

6 hard-cooked eggs, peeled and chopped
30 mL (2 tbsp) drained sweet relish
30 mL (2 tbsp) ranch-style salad dressing
To taste salt and pepper
4, 12 cm (5-inch) Italian-style rolls
250 mL (1 cup) chunky herb and garlic pasta sauce

For garnish
Shredded cheese

     
  1. Blend together eggs, relish, salad dressing, salt and pepper.
  2. Set aside.
  3. Cut rolls in half lengthwise.
  4. Cut each half crosswise into 2 pieces.
  5. Toast cut sides.
  6. Spread 15 mL (1 tbsp) pasta sauce over each toasted bread piece.
  7. Spoon 15 mL (1 tbsp) egg mixture on top.
  8. Garnish with shredded cheese.
  9. Broil until mixture is hot and cheese is melted, about 3 minutes.
  10. Serve warm.

Makes: 16 snacks
Preparation: 8 minutes
Cooking: 5 minutes
