Egg Dishes
Pizza Egg Melts

Ingredients

2 English muffins, split
50 mL (1/4 cup) tomato sauce
15 mL (1tbsp) butter
125 mL (1/2 cup) sliced mushrooms
75 mL (1/3 cup) chopped sweet green pepper
4 eggs
25 mL (2tbsp) milk
pinch each salt and pepper
50 mL (1/4 cup) shredded mozzarella cheese

Method

 

  1. Under broiler or in toaster oven, toast muffins for about 1 minute or until golden.
  2. Spread each with 15 mL (1 tbsp) tomato sauce; set aside.
  3. In nonstick skillet, melt butter over medium heat
  4. cook mushrooms and green pepper, stirring occasionally, for about 5 minutes or until softened.
  5. In bowl, whisk together eggs, milk, salt and pepper until combined
  6. Add to pan and cook, stirring with spatula to form large soft curds, for about 1 minute or until eggs are thickened and moist but no visible liquid remains.
  7. Spoon eggs over muffins.
  8. Sprinkle with mozzarella cheese; broil for about 1 minute or until cheese is melted.

Makes 4: servings.
Preparation: 5-8 minutes
Cooking: 8 minutes.
