Egg Dishes
Exotic Egg Spread

Ingredients

5 eggs, very well beaten
1/2 kg onions chopped finely
3 medium ripe tomatoes, chopped
1 - inch piece of ginger, scraped and pounded coarsely
1 teaspoon chilly powder
1/4 teaspoon turmeric powder
1/2 teaspoon white pepper powder
1/2 teaspoon salt
1 teaspoon fresh basil leaves finely chopped
2 1/2 tablespoon oil
1 tablespoon melted butter
salt as required

Method:

  1. Add white pepper and 1/2 teaspoon of salt to the beaten eggs
  2. Mix well
  3. Heat the ghee in a heavy bottomed frying pan.
  4. Lower the heat to medium and put in the pounded ginger stir for a while till the ginger starts giving out its aroma.
  5. Add the chopped onions and fry.
  6. Add chilly and turmeric powders and fry for another 3-4 minutes.
  7. The onions should not become brown.
  8. Add chopped tomatoes and salt.
  9. Increase the heat and fry till the mixture is almost dry.
  10. Spread the beaten eggs on top and sprinkle the melted butter all over.
  11. Lower the heat and put a lid on the pan.
  12. Let cook till the egg layer is well set.
  13. Garnish with basil leaves and serve with bread slices or phulkas.
