5 eggs, very well beaten
1/2 kg onions chopped finely
3 medium ripe tomatoes, chopped
1 - inch piece of ginger, scraped and pounded coarsely
1 teaspoon chilly powder
1/4 teaspoon turmeric powder
1/2 teaspoon white pepper powder
1/2 teaspoon salt
1 teaspoon fresh basil leaves finely chopped
2 1/2 tablespoon oil
1 tablespoon melted butter
salt as requiredMethod:
- Add white pepper and 1/2 teaspoon of salt to the beaten eggs
- Mix well
- Heat the ghee in a heavy bottomed frying pan.
- Lower the heat to medium and put in the pounded ginger stir for a while till the ginger starts giving out its aroma.
- Add the chopped onions and fry.
- Add chilly and turmeric powders and fry for another 3-4 minutes.
- The onions should not become brown.
- Add chopped tomatoes and salt.
- Increase the heat and fry till the mixture is almost dry.
- Spread the beaten eggs on top and sprinkle the melted butter all over.
- Lower the heat and put a lid on the pan.
- Let cook till the egg layer is well set.
- Garnish with basil leaves and serve with bread slices or phulkas.
