Goa and its inhabitants always bring to mind two things... their love for food and the inevitable "siesta" that follows. Both are pursued with equal devotion and passion, as you will see in the painstaking methods of food preparation, and their laid-back manner of living life to the fullest. Goan food traditionally uses a lot of vinegar or toddy (locally brewed palm vineger) in their spicy dishes. Garlic is another favorite. The traditional dishes like Sorpotel, and Vindaloo usually taste better after they have been kept a few days. Goans believe in preparing everything freshly from raw ingredients, they believe it tastes much better that way. While that may be debated in some circles, one cannot dispute the outcome IS usually mouth watering! Below are few Goan delicacies by Alison Pinto.
