1/2 kg Fish fillets
1 capsicum, thinly sliced
1 tomato, thinly sliced
1 onion, thinly sliced
2 tbsp lemon juice
1/4 cup chopped spring onion
1/8 tsp crushed garlic
1/8 tsp crushed ginger
2 tbsp oil
1/2 ts Salt
1/4 ts Pepper powderMethod:
- Cut fish into small pieces
- Marinate with salt and pepper
- Keep aside for 1/2 hour
- Put the fish pieces in a baking dish
- Top with sliced capsicum, onion and tomatoes
- Layer it with chopped spring onion
- In a small vessel, mix oil, lemon juice, garlic and ginger
- Pour over fish
- Cover and bake for 20 min ate 375 o F
- Uncover and bake for 10 mins. till fish flakes easily
- Serve hot
Yield: 5 servings
