From Free Press JournalThe sweet-spicy flavor of this sauce takes chicken from plain to special. Round out the meal with simple additions such as baked potatoes or plain steamed rice and stir-fried veggies.
Ingredients
1 Tsp. olive or vegetable oil
1/2 cup chopped onion
3/4 tsp. cinnamon
1/8 tsp. fresh ground pepper
3 cloves garlic, minced
4 boneless chicken breast halves
3/4 cup orange juice
1/4 cup raisins
Fresh orange slices (optional)Method
- Heat oil briefly in large skillet
- Add onion, cinnamon, pepper and garlic.
- Cook over medium-high heat for 3-4 minutes
- Stirring frequently to prevent sticking.
- Add chicken and cook about 5 minutes on each side.
- Add orange juice and raisins, cover, and simmer over low heat about 10 mins.
- When chicken is done (juices run out clear when deeply pierced with a fork)
- Serve chicken with some of the onion-raisin mixture spooned on top.
- Garnish with orange slices if desired.
Yield: 4 servings
