Chicken with Cinnamon-Raisin Sauce

The sweet-spicy flavor of this sauce takes chicken from plain to special. Round out the meal with simple additions such as baked potatoes or plain steamed rice and stir-fried veggies.

Ingredients

1 Tsp. olive or vegetable oil
1/2 cup chopped onion
3/4 tsp. cinnamon
1/8 tsp. fresh ground pepper
3 cloves garlic, minced
4 boneless chicken breast halves
3/4 cup orange juice
1/4 cup raisins
Fresh orange slices (optional)

Method

  1. Heat oil briefly in large skillet
  2. Add onion, cinnamon, pepper and garlic.
  3. Cook over medium-high heat for 3-4 minutes
  4. Stirring frequently to prevent sticking.
  5. Add chicken and cook about 5 minutes on each side.
  6. Add orange juice and raisins, cover, and simmer over low heat about 10 mins.
  7. When chicken is done (juices run out clear when deeply pierced with a fork)
  8. Serve chicken with some of the onion-raisin mixture spooned on top.
  9. Garnish with orange slices if desired.

Yield: 4 servings
