Roasted Chicken With Olive Oil

Ingredients

2 whole chicken breasts, skinned, boned, and halved
2 teaspoons olive oil
1 garlic clove, minced
1/4 teaspoon dried oregano
1/4 teaspoon dried tarragon

Method:

  1. Remove skin from chicken breasts; bone.
  2. Combine olive oil, lemon juice, garlic, oregano and tarragon;
  3. Pour over chicken.
  4. Marinate 20 minutes.
  5. Roast at 350 degrees for 35 to 45 minutes, or until done.
  6. Baste frequently during baking.
