Healthy Dishes
Vegetable Pie

Ingredients

750 gms Potatoes
2 Onions
1/2 Sour lime
2 tbsp Oil
1 Carrot
Salt to taste
1/2 tsp sugar
bread crumbs
100 gms fresh beans
100 gms green peas
1/4 cup small mushrooms
4-5 green chillies
few coriander leaves
3 tbsp green chutney

Method

  1. Boil the potatoes.
  2. Dice and boil rest of the vegetables.
  3. Peel and mash the potatoes.
  4. Add salt to the mashed potatoes.
  5. Fry the onion in 2 tbsp oil till golden brown.
  6. Put the boiled vegetables, mushrooms and cook for a while.
  7. Season with finely chopped green chillies, lemon, sugar, salt and coriander leaves.
  8. Grind the ingredients for the chutney.
  9. Divide potato into 3 parts, chutney and vegetables in 2 parts.
  10. Grease a pie dish.
  11. Pour a layer of mashed potato then chutney
  12. Then vegetables again in layer of potatoes and repeat layers finishing with potato.
  13. Sprinkle with bread crumbs over it and dot with butter.
  14. Bake in a moderate oven for 30-40 minutes or till done or brown in color.
  15. Serve hot
