2 cups chopped spinach
1 egg
Salt as per taste
pepper as per taste
3 tbsp chopped spring onion
1 tbsp lemon juice
2 tbsp chopped mintMethod:
- Hard boil egg for 4 mins
- Make small chunks of egg
- Add to spinach
- Toss it with remaining ingredients
- Serve with slices of raw vegetables
