Old-Fashioned Bread Pudding

Ingredients

6 slices day-old white bread, crust removed
2 tablespoons reduced calorie margarine, melted
Sugar substitute to equal 3/4 cup sugar, divided
1 teaspoon ground cinnamon
1/2 cup seedless raisins
Vegetable cooking spray
4 eggs, beaten
2 cups skimmed milk
1 teaspoon vanilla extract

Method:

  1. Brush bread lightly with melted margarine
  2. Sprinkle with 1 teaspoon sugar substitute and cinnamon
  3. Quarter each bread slice. layer raisins in a 1 1/2 quart casserole dish coated with cooking spray.
  4. Set dish aside.
  5. Combine eggs, milk, vanilla, and remaining 2 teaspoons sugar substitute
  6. Pour over bread and raisins in dish.
  7. Place dish in a pan containing 1 inch of hot water.
  8. Bake at 350 degrees Celsius for 55 minutes to 1 hour or until a knife inserted in center comes out clean.
  9. Serve warm, or cover and refrigerate until chilled.
