Cocoa Brownies

Ingredients

3/4 cup egg substitute
1/4 cup lowfat plain yogurt
1 1/2 cups light brown sugar
2 tablespoons melted butter
2 tablespoons canola oil
1 1/2 teaspoons vanilla
1 cup all purpose flour
1/2 cup cocoa powder
1/2 teaspoon salt
1/3 cup powdered sugar
margarine/vegetable oil

Method:

  1. Beat the egg substitute and yogurt with the brown sugar until quite frothy.
  2. Beat in the butter, oil and vanilla and work until the sugar is mostly dissolved.
  3. Sift the dry ingredients together and use a whisk to stir them into the wet ingredients gently by hand until just mixed.
  4. Lightly oil a 7 x 11 pan and spread the batter out evenly.
  5. Bake in a preheated oven until a skewer comes out dry or with a little crumb.
  6. Let cool completely before cutting.
  7. Sift a little powdered sugar on the top after cutting but before serving.
  8. Top with a scoop of your favorite lowfat or fat-free frozen yogurt.

Yield: 12 servings
Prep time: 5 minutes
Cooking time: 20 minutes
Preheat oven: 350F
