3/4 cup egg substitute
1/4 cup lowfat plain yogurt
1 1/2 cups light brown sugar
2 tablespoons melted butter
2 tablespoons canola oil
1 1/2 teaspoons vanilla
1 cup all purpose flour
1/2 cup cocoa powder
1/2 teaspoon salt
1/3 cup powdered sugar
margarine/vegetable oilMethod:
- Beat the egg substitute and yogurt with the brown sugar until quite frothy.
- Beat in the butter, oil and vanilla and work until the sugar is mostly dissolved.
- Sift the dry ingredients together and use a whisk to stir them into the wet ingredients gently by hand until just mixed.
- Lightly oil a 7 x 11 pan and spread the batter out evenly.
- Bake in a preheated oven until a skewer comes out dry or with a little crumb.
- Let cool completely before cutting.
- Sift a little powdered sugar on the top after cutting but before serving.
- Top with a scoop of your favorite lowfat or fat-free frozen yogurt.
Yield: 12 servings

Cooking time: 20 minutes
Preheat oven: 350F
