1/2 kg medium shrimp, peeled and deveined
1/2 cup chopped onion
2 tbsp oil
1/2 tbsp ginger paste
1/2 tbsp garlic paste
1/2 tbsp cumin powder
1/2 tbsp coriander powder
1 tbsp curry powder
2-3 green chillies, chopped finely
Salt as per taste
Pepper as per taste
1 ripe mango, peeled and diced
2 potatoes, peeled and cubed
1 cup coconut milk
1 cup water
Chopped Coriander leaves for garnishingMethod:
- Season shrimp with salt and pepper
- Heat oil
- Saute shrimp for 2-3 minutes
- Remove, drain and keep aside
- In the same pan (add little oil, if it is less), saute onion till transparent
- Add ginger and garlic paste, saute for another 3 minutes
- Add all the powders, potatoes, and green chillies
- Then add coconut milk, salt as per taste, and water
- Bring it to boil
- Let it simmer on slow flame for 10-15 minutes till potatoes are tender
- Add shrimp and mango pieces
- Cook for another 5 minutes
- Garnish with coriander leaves
- Serve hot with rice
