Mexican Dishes
Skillet Pasta

Ingredients

8oz. vermicelli broken in 2" pieces
3 tbsp. oil
3 cloves garlic chopped
2 cups chicken broth
1 cup canned tomatoes
1/2 tsp. leaf oregano
Garnish: sour cream & grated cheese

Method

  1. Heat oil in heavy skillet.
  2. Add pasta, onion & garlic.
  3. Cook & stir till onion is limp.
  4. Add broth, tomatoes & oregano.
  5. Bring mixture to a boil.
  6. Cover skillet & lower heat.
  7. Cook for 15mts. until the pasta is tender and the broth is absorbed.
  8. Top with spoonfuls of sour cream & grated cheese
  9. Serve from skillet.

Serves: 4 servings.
