There are over 2,500 mushroom varieties grown in the world. Portabellas (Portobellos), Shiitakes, Criminis and White mushrooms are the most commonly used cultivated varieties, but the more exotic mushrooms - Morels, Oyster mushrooms, Beech mushrooms, Enokis and Maitakes - are becoming increasingly popular.
Buying: Buy mushrooms which are fresh and has smooth appearance.
Storing: Can be stored in refrigerator. If to be stored longer, store in porous paper bag. Avoid storing in air-tight packets. Clean and rinse them only before use.
Cleaning: Gently wipe mushrooms with a damp cloth or soft brush to remove moss particles. Or, rinse with cold water and pat dry with paper towels.
