Ingredients
1 cup small cubed tofu
3eggs
Salt as per taste
1/4 tsp garlic paste
1 tbsp chopped parsley
2 tbsp oilFor Peanut Sauce
1/2 cup peanut
2 tsp say sauce
2 tsbp fish sauce
2 tsp chilli sauce
1/3 cup unsweetened coconut milk
1 tbsp vinegar
Salt as per taste
1 tsp ginger paste
1 tsp garlic paste
Peanut oil for deep fryingMethod for Peanut Sauce
- Deep fry the peanuts in smoked peanut oil till golden brown (approx 3-4 mins)
- Drain
- Grind the peanuts with 1 tbsp peanut oil
- Add all the ingredients, and blend till smooth
- Add more oil if sauce is thick
Method for Omelette
- Beat eggs with salt
- Fold in tofu and other ingredients except oil
- Heat 1 tbsp oil in a pan
- Pour half of mixture
- Spread over the pan
- Cook it for 5 minutes
- Slide it into plate
- Repeat for remaining mixture
- Spread peanut sauce over the omelettes
- Serve hot
