Ingredients
3 eggs
1 cup thawed frozen fruits
2 tbsp icing sugar
2 tbsp butter
1/8 tsp nutmeg
2-3 drops vanilla essence
Method
- Separate the eggs
- Lightly beat the yolk and icing
- Whisk the whites till stiff
- Add vanilla essence and nutmeg
- Fold in the yolk
- Heat 1 tbsp butter
- Pour 1/2 of egg mixture
- When it sizzles, pour half of the mixture
- Use spatula to gently push cooked portions to the centre, tilting the pan to allow the uncooked egg to flow into empty spaces.
- Continue to do this until omelette is set but still moist
- Let it cook on slow flame till it is golden from top
- Spread half of fruits on half of omelette
- Let it cook for 1/2 a minutes
- Slide into plate
- Fold over the other half
- Repeat for other omelette
- Serve hot
