Parsi Dishes
Eggs on Vegetables

 Ingredients

7 eggs
Pepper as per taste
2 tbsp butter
1 onion chopped finely
1 tbsp lemon juice

Mix together:

1 cup chopped and boiled carrots
1 potato, boiled, peeled and diced
1/4 cup chopped capsicum
1/2 cup boiled peas
1/2 cup chopped and boiled french beans
1/4 cup chopped coriander leaves
1/4 cup chopped celery
1/4 tsp turmeric powder
1/2 tsp red chilli powder
2 tomatoes, chopped finely
Salt as per taste

Method:

  1. Heat oil
  2. Fry onion till transparent
  3. Add mixed vegetables
  4. Cook for 5 minutes
  5. Mash it well
  6. Add lemon juice
  7. Cook for another 10-15 minutes
  8. Spread the vegetables in a  flat nonstick plate
  9. Whisk the eggs, add salt and pepper
  10. Spread over the vegetables
  11. Cook the vegetable on slow flame for 10 minutes
  12. Cut into serving pieces
  13. Serve hot
