Ramadan Dishes
Salmon Loaf

Ingredients

2 cans (16 oz. each) salmon
1 1/2 cup liquid (salmon liquid plus milk)
3 cup. coarse cracker crumbs
2 tsp. chopped onion
2 eggs
2 tbsp lemon juice
1/2 tsp. each salt and pepper

Method

 

  1. Heat oven to 350 degrees (Moderate).
  2. Grease a loaf pan, 9x5x3”.
  3. Flake salmon and remove bones and skin.
  4. Blend in eggs.
  5. Stir in remaining ingredients.
  6. Spoon lightly into pan.
  7. Bake 45 minutes.
  8. Garnish with lemon wedges.

Serves 8
