Ramadan Dishes

Ingredients

2 lbs. fish
1 cup olive oil
I cup chopped onion 
8 cloves garlic, chopped
1/2 tsp. salt
1/4 cup lemon juice
1/4 tsp. red pepper
1/2 tsp. cumin
1/2 cup fresh coriander leaves, chopped parsley

Method

  1. Clean and sprinkle fish lightly with salt.
  2. Cut into serving pieces and fry in medium hot oil 5 minutes.
  3. Remove meat from bones.
  4. Simmer bones, head, and skin 30 minutes in water to cover.
  5. Strain broth.
