Egg Mayonnaise

Ingredients

1 egg yolk
1/4 tsp salt
1/8 tsp black pepper
1/2 tsp mustard
1/2 tsp sugar
1 cup salad oil
1 tbsp lemon juice

Method:

  1. Break the yolk in a bowl
  2. Add salt, pepper, mustard and sugar
  3. Mix it well
  4. Add drop by drop oil, whisking the egg mixture till it thickens
  5. Gradually add vinegar and mix thoroughly

Variations:

  1. Instead of lemon juice can add taragon vinegar or cider vinegar
  2. Can add 1 tbsp ketchup
  3. Can add 2 tbsp chopped olives
  4. Can add 2 tbsp chopped celery
