1 egg yolk
1/4 tsp salt
1/8 tsp black pepper
1/2 tsp mustard
1/2 tsp sugar
1 cup salad oil
1 tbsp lemon juiceMethod:
- Break the yolk in a bowl
- Add salt, pepper, mustard and sugar
- Mix it well
- Add drop by drop oil, whisking the egg mixture till it thickens
- Gradually add vinegar and mix thoroughly
Variations:
- Instead of lemon juice can add taragon vinegar or cider vinegar
- Can add 1 tbsp ketchup
- Can add 2 tbsp chopped olives
- Can add 2 tbsp chopped celery
