Egg Salad

Ingredients

5 hard boiled eggs
1/4 cup grated carrots
2 potatoes, boiled and peeled
3-4 lettuce leaves, broken into pieces well
1/2 tsp white pepper powder
1/4 tsp dry mustard
1/4 cup chopped celery
1/2 cup mayonnaise
3 tbsp milk
2 tsp sugar
Salt as per taste

Method:

  1. Peel and chop 3 eggs into pieces
  2. Mash the potatoes
  3. Mix chopped eggs, carrots and potatoes
  4. Add salt and pepper
  5. Chill for 1 hour
  6. Mix mayonnaise, milk, sugar, and mustard
  7. Shake well till creamy
  8. Pour it over egg mixture, keeping little remaining (approx 1/4 part)
  9. Mix it will
  10. In a salad dish, spread lettuce leaves
  11. Spread the egg mixture over it
  12. Slice the remaining 2 eggs, remove the yolk
  13. Top it with sliced eggs and then sprinkle crumbled yolk
  14. Again pour the mayonnaise dressing
  15. Chill for 1/2 hour and then serve
