Spicy Prawn Salad

Ingredients

12 prawns
1 tomato, chopped finely
2 tbsp finely chopped parsley

Mix together for Dressing:
2 tbsp finely chopped lemon grass
3 tsp fish sauce
5 green chillies, finely chopped
1 small onion, finely chopped
1 tbsp crushed mint leaves
1 small raw mango, chopped finely
1 tbsp lemon juice
2 tbsp vinegar
1 tbsp olive oil
Salt as per taste

Method:

  1. Refrigerate the dressing for 1 hour
  2. Clean and devein prawn
  3. Slit them keeping intact
  4. Boil in hot water till cooked
  5. Drain and keep aside till cool
  6. In a salad dish mix prawn and tomato
  7. Pour the dressing over it
  8. Toss the salad
  9. Garnish with parsley leaves before serving
