Crab Salad

Ingredients

1 cup boiled crab meat
1/2 cup raw rice
6-7 strands of saffron
2 green chillies, chopped finely
1/4 cup chopped spring onion
1/4 cup chopped and boiled carrots
1/4 cup diced and boiled zucchini
2 tbsp cup chopped capsicum
1/4 tsp red chilli powder
1 tsp cummin seeds powder
2 tsp chaat masala (curry powder)
1/4 cup finely chopped coriander leaves
1 cup french dressing
2 hard boiled, sliced for garnishing

Method:

  1. Soak rice for 1/2 hour
  2. Cook it by adding saffron strands in it
  3. Cool it by separating the grains
  4. Add chaat masala in the dressing keep aside
  5. Mix all the ingredients except dressing and eggs
  6. Add the dressing and toss it
  7. Arrange the egg slices on the sides of the dish
  8. Serve cold (refrigerate atleast for 1/2 hour)
