1/4 kg boneless chicken breast, skinless
1/4 cup chopped spring onion
1/2 cup boiled peas
1 cup shredded carrots
2 cups shredded lettuce
1 cup chinese noodles, heated briefly to crispMix together for dressing:
1/2 tsp grated ginger
1 tbsp lemon juice
1 tbsp rice vinegar
1/4 tsp red chilli paste
1 tsp sesame oil
2 tbsp peanut butter 4 tsp soy sauce
Salt to taste
1/4 cup mixed fruit jamMethod for Dressing:
- Blend into smooth dressing all the ingredients of dressing
Method:
- Boil the chicken till cooked
- Make into small pieces (1" approx)
- In a bowl mix chicken pieces, peas, carrots and spring onion
- Pour the dressing on the mixture and toss it well
- In a salad dish, spread the lettuce leaves
- Cover with noodles
- Finally pour the chicken mixture over it
- Before serving garnish with crisp noodles or coriander leaves
