Chinese Chicken Salad

Ingredients

1/4 kg boneless chicken breast, skinless
1/4 cup chopped spring onion
1/2 cup boiled peas
1 cup shredded carrots
2 cups shredded lettuce
1 cup chinese noodles, heated briefly to crisp

Mix together for dressing:
1/2 tsp grated ginger
1 tbsp lemon juice
1 tbsp rice vinegar
1/4 tsp red chilli paste
1 tsp sesame oil
2 tbsp peanut butter 4 tsp soy sauce
Salt to taste
1/4 cup mixed fruit jam

Method for Dressing:

  1. Blend into smooth dressing all the ingredients of dressing

Method:

  1. Boil the chicken till cooked
  2. Make into small pieces (1" approx)
  3. In a bowl mix chicken pieces, peas, carrots and spring onion
  4. Pour the dressing on the mixture and toss it well
  5. In a salad dish, spread the lettuce leaves
  6. Cover with noodles
  7. Finally pour the chicken mixture over it
  8. Before serving garnish with crisp noodles or coriander leaves
