8 eggs
2 tbsp chopped capsicum
1/4 cup carrots, thinly sliced and boiled
2 onions, sliced
2 tomatoes, sliced
1/4 cup chopped spring onion
2 tbsp chopped parsley
1 green chillies, chopped finely
Pepper as per taste
Salt as per taste
8 tsp cooking oilMethod:
- Put 2 teaspoons of oil in a frying pan.
- Let oil get heated
- Break 2 eggs into the pan, taking care not to break the yolks.
- Spoon oil over the eggs continuously
- Let cook slowly until the whites of the eggs are set.
- Repeat the procedure for the remaining eggs
- Chop the eggs coarsely
- Before serving, toss all the ingredients
