Fried Egg Salad

Ingredients

8 eggs
2 tbsp chopped capsicum
1/4 cup carrots, thinly sliced and boiled
2 onions, sliced
2 tomatoes, sliced
1/4 cup chopped spring onion
2 tbsp chopped parsley
1 green chillies, chopped finely
Pepper as per taste
Salt as per taste
8 tsp cooking oil

Method:

  1. Put 2 teaspoons of oil in a frying pan.
  2. Let oil get heated
  3. Break 2 eggs into the pan, taking care not to break the yolks.
  4. Spoon oil over the eggs continuously
  5. Let cook slowly until the whites of the eggs are set.
  6. Repeat the procedure for the remaining eggs
  7. Chop the eggs coarsely
  8. Before serving, toss all the ingredients
