Curried Chicken Salad

Ingredients

2 cups boiled rice
2 cups chicken cubes, boiled
1/2 cup seedless grapes
1/2 cup French dressing
1 tbsp curry powder
1 cup mayonnaise
1/2 cup sour cream
1 cup shredded cabbage
1/4 cup shredded carrots
1 capsicum, cut into thin strips
1/2 cup shredded coconut
lettuce leaves
Salt as per taste

Method:

  1. Mix together carrots, capsicum, grapes and cabbage
  2. Pour French dressing
  3. Toss it well
  4. Keep aside for 15 mins
  5. In a separate bowl, mix rice and chicken pieces
  6. Add salt, curry powder, mayonnaise and sour cream
  7. Add mixed vegetables
  8. Toss it well
  9. Spread in on the bed of lettuce
  10. Sprinkle shredded coconut
  11. Serve
