2 cups boiled rice
2 cups chicken cubes, boiled
1/2 cup seedless grapes
1/2 cup French dressing
1 tbsp curry powder
1 cup mayonnaise
1/2 cup sour cream
1 cup shredded cabbage
1/4 cup shredded carrots
1 capsicum, cut into thin strips
1/2 cup shredded coconut
lettuce leaves
Salt as per tasteMethod:
- Mix together carrots, capsicum, grapes and cabbage
- Pour French dressing
- Toss it well
- Keep aside for 15 mins
- In a separate bowl, mix rice and chicken pieces
- Add salt, curry powder, mayonnaise and sour cream
- Add mixed vegetables
- Toss it well
- Spread in on the bed of lettuce
- Sprinkle shredded coconut
- Serve
