From Shireen DasIngredients
1 packet lemon gelatin
1 bunch spinach, washed and stemmed
1 onion, chopped finely
2 tbsp chopped spring onion
4 tbsp vinegar
1/4 tsp mustard powder
1/2 cup grated cheese
1/4 cup chopped boiled eggs
1/2 cup mayonnaise
1/4 tsp salt
1 cup boiling water
1/2 cup cold waterMethod:
- Dissolve gelatin and salt in boiling water
- Add cold water and vinegar
- Mix it well
- Pour in a glass bowl
- Chill till set
- Chop spinach
- Cook till tender in water
- Drain in colander and pour ice cold water over it, to retain the colour
- Drain and cool
- Add spinach, onion, spring onion and mustard in the set gelatin
- Mix it
- Pour it over salad dish
- Garnish with mayonnaise, cheese and boiled eggs
- Serve chilled
