Sandwiches
Muffuletta

This is a specialty of New Orleans. Muffulettas are usually made with a round Italian loaf with thick crust. The olive salad is what sets muffulettas apart from most other sandwiches.

Ingredients

For Olive Salad
1/2 cup kalamata olives, chopped coarsely
1/4 cup olive oil
1/4 cup pimiento-stuffed green olives, chopped coarsely
1/2 cup chopped celery
1 tsp garlic paste
1 onion, chopped finely
1/4 cup finely chopped cauliflower
1/2 tsp dried oregano
1/4 tsp black pepper powder
1/4 tsp crushed red chilli

For Sandwich:
1 round Italian bread with thick crust (8-10" diameter)
200 gms (approx 1/4 pound) provolone cheese, thinly sliced
100 (approx 3 oz) gms salami, sliced
100 gms ham, thinly sliced
100 gms mortadella, thinly sliced
lettuce leaves

Method for olive salad:

  1. Heat 2 tbsp oil in a pan
  2. Fry onion, cauliflower till onion are transparent
  3. Add celery, cauliflower and garlic
  4. Stir for 2 minutes
  5. Add oregano, red chilli, pepper powder
  6. Stir for another 2 mins. remove from fire
  7. Let is cool
  8. Add remaining oil, green and kalamata olives
  9. Stir it well and keep aside

Method to make Sandwich:

  1. Cut bread in half horizontally
  2. Remove soft part from centre (1" inside from side) from each half (approx 1" deep)
  3. Put half of olive salad into bottom half of loaf.
  4. Layer it with 1/3rd of cheese slices
  5. Then layer it with ham slices
  6. Again layer it with 1/3rd of cheese slices
  7. Layer it with mortedella
  8. Layer with the remaining cheese slices
  9. Then put salami slices
  10. Finally top it with the remaining olive salad
  11. Cover with the other half loaf
  12. Preheat the oven at 450 o F
  13. Wrap the sandwich in a foil
  14. Bake the sandwich for 20 min (till cheese melts)
  15. Unwrap
  16. Cut into wedges with sharp serrated knife
  17. Serve with wafers and lettuce
