Singapore Dishes
Oysters in Egg Omelette

Ingredients

8 tbsp sweet potato flour
2 cups water
1 tbsp finely chopped garlic
12 to 15 fresh baby oysters
1 tsp fish sauce (or to taste)
3 medium size eggs
1 bunch chopped coriander (garnish)
slices of chillies (garnish)
chillie/garlic sauce (dipping)

  Method:

  1. Dissolve flour in water, mix well
  2. Fry garlic in oil till fragrant then stir in dissolved flour - continue to stir (don't stop) 
  3. When it's hardened and somewhat brown, add in eggs and scramble
  4. Mix cut vegetables with cooled sauce and black shrimp paste in large mixing bowl
  5. Sprinkle in fish sauce making sure you hear the sizzling sound
  6. Add oysters
  7. Garnish with coriander and chillies, set aside a bowl of chilli and garlic sauce for dipping

Makes about 4 to 6 serving.
