Ingredients
8 tbsp sweet potato flour
2 cups water
1 tbsp finely chopped garlic
12 to 15 fresh baby oysters
1 tsp fish sauce (or to taste)
3 medium size eggs
1 bunch chopped coriander (garnish)
slices of chillies (garnish)
chillie/garlic sauce (dipping)Method:
- Dissolve flour in water, mix well
- Fry garlic in oil till fragrant then stir in dissolved flour - continue to stir (don't stop)
- When it's hardened and somewhat brown, add in eggs and scramble
- Mix cut vegetables with cooled sauce and black shrimp paste in large mixing bowl
- Sprinkle in fish sauce making sure you hear the sizzling sound
- Add oysters
- Garnish with coriander and chillies, set aside a bowl of chilli and garlic sauce for dipping
Makes about 4 to 6 serving.
