Brown Rice Stew

Ingredients

1 cup uncooked brown rice
3 cups chicken broth
2 carrots, sliced
1/2 cup chopped onion
1/2 cup chopped celery
1 cup chopped spring onion
1/2 tsp minced garlic
1/4 tsp minced ginger
6-7 tomatoes, peeled and chopped
1/2 cup shelled peas
Salt as per taste
1/4 tsp pepper powder
1/2 tsp oregano
1/2 tsp thyme
2 tbsp chopped coriander leaves

Method:

  1. In a large sauce mix all the ingredients except oregano, thyme and coriander leaves
  2. Bring to boil
  3. Reduce the heat and let it simmer, stirring occasionally
  4. Let it cook till rice is tender, approx 50 mins.
  5. Put oregano and thyme
  6. Stir and let it simmer for another 2-3 min
  7. Put in serving dish, garnish with coriander leaves
