1 cup uncooked brown rice
3 cups chicken broth
2 carrots, sliced
1/2 cup chopped onion
1/2 cup chopped celery
1 cup chopped spring onion
1/2 tsp minced garlic
1/4 tsp minced ginger
6-7 tomatoes, peeled and chopped
1/2 cup shelled peas
Salt as per taste
1/4 tsp pepper powder
1/2 tsp oregano
1/2 tsp thyme
2 tbsp chopped coriander leavesMethod:
- In a large sauce mix all the ingredients except oregano, thyme and coriander leaves
- Bring to boil
- Reduce the heat and let it simmer, stirring occasionally
- Let it cook till rice is tender, approx 50 mins.
- Put oregano and thyme
- Stir and let it simmer for another 2-3 min
- Put in serving dish, garnish with coriander leaves
