Potato Stew

Ingredients

1/2 kg potato, peeled and chopped into 1/2" pieces
1/4 cup peas
1/4 cup chopped french beans
1/4 cup chopped cauliflower
1/4 cup chopped carrots
1/4 cup chopped onion
1/2 cup shredded meat
1 cup chicken broth
2 cups water
Salt as per taste
1/4 tsp pepper powder
2 tsp oil

Method:

  1. In a saucepan, mix peas, french beans, carrots and cauliflower
  2. Add 2 cups water and boil the vegetables, till tender
  3. Drain the water and keep aside the stock and vegetables
  4. Make the vegetable stock to 1 cup adding plain water if needed
  5. Heat oil in saucepan
  6. Stir onion, and fry till golden brown
  7. Add potatoes, salt, broth and stock
  8. Bring to boil
  9. Cook covered for approx 10 mins. till potatoes are tender
  10. Add meat and cooked vegetables
  11. Mix well, and cook for 7-8 mins.
  12. Garnish with pepper powder
  13. Serve hot
